The kitchen
Mezze and grills the way they are made in Beirut and Damascus, cooked with what the Gulf actually keeps: loomi, saffron, dried lime, tamarind, dates.
The fire
Lump charcoal, no gas assist. It comes up to temperature slowly and holds, which is why the lamb goes on at six and not before.
“My grandmother pounded kibbeh by hand and would not let a machine near it. We still do it that way, which is why it runs out on a Friday. Order it early or come back Sunday.”

Walk-ins take whatever is free, which after eight is usually nothing. Book and the table is yours for two hours.
